Abstract
In this research,to explore the mechenism of water state change and migration in egg white under carbon dioxide modified atmosphere( CDMAP) storage. Materials were eggs of white Leghorns,experimental group( EG) was carbon dioxide modified atmosphere packed,control group( CG) was without treatment. They were stored at 25 ℃ for 0,10,20,30,40 d. And egg freshness indexes and moisture content of egg white were determined respectively. The results showed that during the storage,the uneasy flowing water of EG did not change significantly,T23 increased significantly. Otherwise the uneasy flowing water of CG increased significantly,T23 decreased significantly.These proved that CDMAP could restrain the decline of waterprotein combination capacity as well as boost the dynamic characteristics of free water. Through the correlation analysis,T22 could be the indicator to predict the egg freshness as it correlated well with the egg freshness indexes of EG and CG.
