Abstract
The objective of this study was to investigate the growth kinetics of Shewanella putrefaciens( specific spoilage organisms,SSO) and total viable count( TVC) in pallet- package sturgeon and develop and evaluate the predictive models of shelf life of pallet- package sturgeon. Modified Gompertz equation and square root equation were used as primary and secondary models respectively so as to fit the bacterial growth and shelf life prediction at temperatures from 0 ℃ to 20 ℃. Meanwhile,these models were validated under isothermal( 8 ℃) and dynamic conditions.The accuracy factors( Af),bias factors( Bf) and the relative errors of shelf life predictive models of Shewanella putrefaciens were 1.28 and 1.35,0.91 and 1.08,5.23% and 3.83%,respectively. Meanwhile,Af,Bf,and the relative errors of shelf lives predictive models in TVC were 1.45 and 1.30,0.92 and 0.96,- 4.40% and 2.02%,respectively.The results indicated that the shelf life predictive models of pallet- package sturgeon stored at 0~20 ℃based on the growth kinetics of Shewanella putrefaciens and TVC were effective and had great potential for application in pallet- package sturgeon product.
