Research progress in deep processing of Euryale ferox

Euryale ferox is one of the important aquatic plants in China and is of edible and medical values.Due to abundant nourishment composition in the seed of Euryale ferox,it could be used as raw materials for food processing.Furthermore,the coat,shell,petiole and peduncle of Euryale feroxare could also be used as raw materials for preparation of bioactive compounds.The study on processing of Euryale feroxare in recent years,such as dehulling,preservation,drying,macromolecules reseraches,byproducts utilization and Euryale feroxare food researches,was summarized in this review to provide a theoretical basis for the full use of Euryale ferox resources.
