Effect of sealed gas environment on the nitrate, nitrite and storage quality of summer spinach

  • The effect of low temperature ( 4℃) sealed gas storage environment on the storage quality of spinach, especially for the nitrate, nitrite and nitrate reductase enzyme activity was studied.The results showed that compared with the control ( not airtight environment) , sealed gas environment in low temperature could significantly slow the decrease of soluble solids, VCand chlorophyll content of the spinach, maintain higher activities nitrate reductase ( NR) and art enzymes ( SOD, POD, CAT) of spinach, inhibit the production of malondialdehyde.Nitrate and nitrite content were 1318.44, 0.42mg /kg on the eighth day, with 31.96% and 26.19% decreased compared with the control.Experiment showed that the low temperature sealed gas environment could effectively reduce the accumulation of nitrate and nitrite, improve the safe handing quality of spinach.
