Abstract
The preparation methods of granular cold- water- soluble starches ( GCWS) were introduced. Alcoholic-alkaline treatment for preparation technology of GCWS starches from different varieties of starches were compared.Physical and chemical characteristics of GCWS starches were summarized, including solubility, pasting properties, thermal properties, etc., as well as the application in the food industry. Future research directions on granular cold-water-soluble starches were discussed.
