Research prospects of Phytochemicals and its health effect

  • 摘要: 植物化学物质是植物性食物中除已知必需营养素以外的一类生物活性物质的总称,由于其具有较强的抗氧化活性并可预防慢性疾病而引起人们的关注。本文对植物化学物质的抗氧化作用、对慢性疾病的预防效应及研究前景等进行了综述,旨在为以后的功能食品开发提供思路。 
    Abstract: Phytochemicals in plant foods in addition to the known essential nutrients, other than the general term for a class of biologically active substances, and a cause for concern because of its strong antioxidant activity and prevention of chronic diseases.Antioxidation of phytochemicals, the effect of chronic disease prevention and research prospects are reviewed, and aims to provide ideas for the future development of function food.
