荷兰黄瓜外部水分迁移模型及实验研究

摘要: 综合单向扩散、双膜理论以及有效膜模型等原理,提出了荷兰黄瓜在贮藏前期的外部水分迁移传质模型——类单向扩散过程,通过实验导出了荷兰黄瓜在恒温恒湿条件下水分迁移时的有效膜厚度△x,避免了理论分析过程中存在的有效膜厚度难以确定等问题,为预测果蔬前期水分损失提供了一个新的思路。Abstract: Based on one-way diffusion, double membrane theory and effective membrane model, the external moisture transfer models of Dutch cucumber in the beginning of storage was built, which was called analogous diffusion in one-way direction. Then the effective film thickness was derived through experiment on water evaporation strength of Dutch cucumber under the condition of constant temperature and humidity, which avoided problem that it was difficult to determine thickness of effective film during analyzing its moisture transfer process, and provided a new thought for forecasting the water loss of fruits and vegetables in the beginning of storage.
