Functional study of different rice protein concentrate effect on cholesterol level and anti-fatigue

  • 摘要: 以小鼠为实验对象,通过分别喂养低温处理方法和高温处理方法获取的大米蛋白,考察了不同处理方式的大米蛋白的降低胆固醇以及减缓疲劳的功效,并进行了对比。实验结果表明,大米蛋白降低胆固醇效果明显,降低幅度分别为26.87%(低温)和19.60%(高温)。低温处理的大米蛋白对减缓疲劳也有显著效果,小鼠负重游泳后,服用低温处理的大米蛋白一组的血清中乳酸脱氢酶活力升高15.16%,血尿素氮降低10.7%,而服用高温处理的大米蛋白一组则效果不佳。同时,研究表明大米蛋白的服用未对小鼠肝脏造成不利影响。 
    Abstract: To evaluate the effects of different rice proteins concentrate on cholesterol, the cholesterol-rich rats were fed with LTRPC and HTRPC for 4 weeks. Total cholesterol (TC) , triglyceride (TG) , high-density lipoprotein cholesterol (HDL-C) in rats blood were measured. Compared with low temperature rice protein concentrate (LTRPC) and high temperature rice protein concentrate (HTRPC) , LTPRC decreased total cholesterol 26.87%, however, HTPRC just showed 19.06% decrease. As key factors of anti-fatigue, lactic dehydrogenase (LDH) and blood urea nitrogen (BUN) was measured after rats swim. LTRPC showed 15.16% increase and 10.7% decrease, which means LTRPC had good effect on increasing the ability of anti-fatigue. However, HTRPC did not showed its effect. At the same time, the research did not found any effect on rats liver after feeding different rice protein.
